Blueberry Muesli

Makes 3 servings

A mixture of grains, nuts, and dried fruit, muesli was developed by the Swiss as a one of the first breakfast cereals. Muesli is often soaked in fruit juice and served with fresh fruit. 

  • 2 cups rolled oats

  • 1/4 cup chopped almonds

  • 1/2 cup chopped dried fruit (apples, figs, apricots, etc.)

  • 1/2 cup raisins

  • 1 fortified soy- or rice milk, fruit juice, or applesauce

  • 2 cups fresh or frozen blueberries

Combine oats, almonds, dried fruit, and raisins. Leave whole or grind in a food processor for a finer cereal. Store in an airtight container in the refrigerator.

To serve, mix with non-dairy milk, fruit juice, or applesauce. Stir in fresh or frozen blueberries and let stand several minutes before serving.

Blueberry Cereal Bars
Ingredient Quantity
All purpose flour 1 pound (4 ounces)
Baking powder 1 tablespoon (1/2 ounce)
Salt 1-1/2 teaspoons (1/4 ounce)
Stick margarine or butter, softened 8 ounces
Granulated sugar 1 pound
Eggs 4
Pure vanilla extract 2 teaspoons
Low fat milk 8 ounces
Quick cooking oats 10 ounces
Frozen, unsweetened blueberries 1 pound
Corn/rice cereal squares, coarsely crushed 12 ounces


1. Have all ingredients at room temperature.

2. In a bowl combine flour, baking powder and salt.

3. In mixer, place margarine and sugar; with the paddle attachment, mix at low speed until light and fluffy.

4. Add eggs and vanilla; beat until smooth.

5. Add milk, flour mixture, and oats; beat until blended, scraping down sides of the bowl as necessary.

6. Stir in blueberries (batter will be stiff).

7. Spread evenly in a greased 18 x 26 inch pan.

8. Sprinkle cereal over top.

9. Bake at 350° F until golden brown and tester comes out clean, about 40 minutes. Cool in pan. Cut in pan in 2-inch squares or 1-1/2 x 3-inch bars.


Yield: about 117 bars

 
 

Blueberry Cashew Granola

       2 ½ cups old-fashioned rolled oats

       2/3 cup unsalted cashew halves

       ½ cup wheat germ

       1/3 cup unsalted sunflower seeds

       1/3 cup molasses

       1/3 cup honey

       1 tablespoon canola oil

       1 ½ teaspoons cinnamon

       ½ teaspoon nutmeg

       1 cup dried blueberries

 

1.     Heat oven to 275 degrees.

2.     Line a baking sheet with aluminum foil and spray with vegetable cooking spray.

3.     Combine oats, cashews, wheat germ and sunflower seeds in a large bowl.

4.     In a separate bowl, combine molasses, honey, oil, cinnamon and nutmeg.

5.     Pour molasses mixture over oat mixture and stir well.

6.     Spread evenly in prepared pan.

7.     Bake 30 minutes or until golden, stirring after 15 minutes and frequently after that.

8.     Remove from oven and cool completely.

9.     Stir blueberries into granola mixture.

Makes 10 servings (about ½ cup each).
