Smoothie Saturday: Blueberry Daiquiri


Not only is it a Smoothie Saturday, it’s also National Blueberry Month! What better way to celebrate this wonderful little blue dynamo than by enjoying a Blueberry Daiquiri? Take advantage of peak season and blend blueberries with lime juice, rum, and ice for a delectable way to toast to the brilliant blueberry.

1-1/2 tablespoons lime juiceBlueberry-Daiquiri

1/2 cup frozen or fresh blueberries

1-1/2 ounces light rum*

1 cup crushed ice

In an electric blender place lime juice, blueberries and rum. Blend until smooth. Add ice and blend until slushy. Garnish with blueberries skewered on picks circled with a strip of lime peel, if desired.

Yield 1 cup

*Note: To make this smoothie non-alcoholic, simply substitute rum with your favorite juice.
