Blueberry Coconut Mojito

  • 1⁄4 cup blueberries, plus more for garnish
  • 10 mint leaves, plus more for garnish
  • 1⁄2 ounce simple syrup
  • 1 ½ ounces white rum
  • 1 ounce lime juice
  • 3⁄4 ounces coconut milk
  • 1⁄4 cup sparkling water


  1. Prepare blueberry puree: Blend blueberries. Add a splash of water if necessary. Use a fine mesh strainer to strain into a cup, discarding solids. Set aside.
  2. Add mint leaves and simple syrup to a cocktail shaker and gently muddle to release the oils from the mint. Add white rum, ¾ ounce blueberry puree, lime juice, coconut milk and ice and shake until chilled.
  3. Fill prepared cocktail glass with ice. Strain cocktail mixture into the glass. Top with sparkling water and combine. If desired, garnish with mint, blueberries and edible flowers.

Recipe Tip

For an optional rim, combine 1 teaspoon of sugar and 1 teaspoon of lime zest in a shallow dish. Moisten the rim of your cocktail glass with citrus juice or honey. Dip in the sugar mixture until the rim is coated.
