Blueberry Cucumber Refresher

Ingredients

  • ⅔ cup cold water
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1⁄2 cup fresh or frozen blueberries
  • 1⁄2 cup cucumber, roughly chopped , plus 1 thinly cut lengthwise piece for garnish
  • 2 teaspoons of fresh ginger, peeled (about a 1⁄2-inch piece)
  • 3 mint leaves
  • 3 ounces club soda to top, chilled

Instructions

  1. Add water, lime juice, honey, blueberries, cucumber, ginger, and mint leaves to a blender.
  2. Blend on high speed until completely combined.
  3. Strain the mixture through a fine metal sieve into a glass filled with ice. Top with club soda.
  4. Garnish the refresher by threading the lengthwise cucumber slice onto a cocktail skewer to create a wavy pattern, then add blueberries on the end of the skewer to hold the cucumber in place.

Recipe Tip

  • If you prefer a sweeter drink, add more honey to taste.

  • Swap honey for maple syrup or simple syrup if desired.
  • You can swap mint for fresh basil if desired.
