Ingredients
- ⅔ cup cold water
- 3 tablespoons fresh lime juice
- 1 tablespoon honey
- 1⁄2 cup fresh or frozen blueberries
- 1⁄2 cup cucumber, roughly chopped , plus 1 thinly cut lengthwise piece for garnish
- 2 teaspoons of fresh ginger, peeled (about a 1⁄2-inch piece)
- 3 mint leaves
- 3 ounces club soda to top, chilled
Instructions
- Add water, lime juice, honey, blueberries, cucumber, ginger, and mint leaves to a blender.
- Blend on high speed until completely combined.
- Strain the mixture through a fine metal sieve into a glass filled with ice. Top with club soda.
- Garnish the refresher by threading the lengthwise cucumber slice onto a cocktail skewer to create a wavy pattern, then add blueberries on the end of the skewer to hold the cucumber in place.
Recipe Tip
- If you prefer a sweeter drink, add more honey to taste.
Variations
- Swap honey for maple syrup or simple syrup if desired.
- You can swap mint for fresh basil if desired.
