Ingredients

  • 1 cup blueberries
  • 1⁄3 cup barbecue sauce
  • 1 (12-inch) prepared pizza crust
  • 1 cup shredded Monterey Jack cheese
  • 1 cup chopped rotisserie chicken
  • 1 large jarred roasted red pepper, thinly sliced
  • 2 green onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil leaves, torn

Instructions

  1. Preheat oven to 450°F.
  2. In a small bowl, stir together blueberries and barbecue sauce. Using fork, mash a few blueberries.
  3. Spoon blueberry mixture over prepared crust, leaving 1/2-inch border. Sprinkle with Monterey Jack cheese. Top with chicken, roasted red pepper and green onions. Drizzle with oil.
  4. Bake for 15 to 18 minutes or until crust is golden brown, and cheese has melted and is bubbling.
  5. Let cool for 5 minutes. Sprinkle with basil before slicing.

  • Alternatively, use store-bought pizza dough and roll into a 12-inch round on lightly floured work surface.
  • For mini pizzas, substitute prepared pizza crust with 4 to 6 Greek pita breads or mini naan breads.
